Trisha Lewis' beef fajitas with sour cream, guacamole & homemade wedges: Today

Ingredients

  • Beef strips – 200g
  • ½ tsp of cumin, cayenne, garlic salt & pepper
  • 6 x mushrooms
  • 1 x red pepper sliced
  • 1 x red onion
  • 3 x cloves garlic.
  • Fist of rocket
  • Sliced red onion x 1 for the salad part
  • 100g sour cream (if you don't have this bought you can whip some cream and add some
  • lemon juice to it)
  • Picked coriander for garnish

Guacamole

  • 2 x medium avocados
  • 10 ml x Olive oil
  • 1 x full lime, juiced
  • 1 x red diced chilli
  • 1 x red diced onion
  • 1 x tsp garlic puree
  • Sea salt & black pepper

Method

  1. Sauté your beef, garlic and peppers.
  2. Add in your seasoning and heat your wraps.
  3. Serve with some crisp rocket and salsa.

Guacamole

  1. In a bowl pop in your avocado and mash with your olive oil, lime juice, chilli, red onion and garlic puree.
  2. Store in a tub and cover the top with clingfilm.
  3. Pop in the stone in the mix and this will last for 3 days in the fridge!
