Ingredients
- 100g plain flour
- 2 tsp baking powder
- 75g ground almonds
- 175 butter at room temperature
- 175 brown sugar
- 1 tsp of five spice mix
- Salt
- 3 eggs beater
For the topping
- 3 apples
- 15g butter
- 25g sugar
Method
- Preheat the oven to 160C
- Butter the sides and line the base of a 24cm Springform tin.
- Sieve the flour and baking powder and add the almonds.
- Beat the butter, sugar five spice powder and a pinch of salt together until light and fluffy.
- Beat in one egg at a fime followed by a tablespoon of the flour mix after each egg. Gently fold in the remaining flour mix.
- Transfer to the prepared tin.
- Peel, quarter and core the apples. Cut each quarter into three slices.
- Arrange the apples slightly overlapping circles over the cake mixture,
- Brush the apples with the melted butter and sprinkle with sugar,
- Bake until the cake sides are coming away from the tin and the apples on top are slightly golden, about 50 minutes.
- Transfer to a wile rack and leave to cool for 15 minutes.
- Run a knife around the sides of the cake to loosen before turning out. Serve at room temperature with thick creamy yogurt.
